Creamy Topping
Great Substitute for Whipped Cream

1 box Mori-Nu silken tofu, medium or firm
2 Tbsp sweetener
1/2 tsp vanilla
dash of salt

Blend in blender until smooth and creamy.

Chill and serve as you would whipped cream.

Add 1/2 cup raw cashews to other ingredients and blend thoroughly. If necessary, add small amount of water to allow it to blend. This makes a richer topping. You may want to add a bit more sweetener.
